Evans<\/p>\n\n\n\n<p>This recipe will make roughly 20 vegetable tamales. &nbsp;It can be doubled or tripled with no problem. <\/p>\n\n\n\n<p>3 Poblano chiles, roasted, peeled, seeded and diced<\/p>\n\n\n\n<p>1 yellow onion, diced<\/p>\n\n\n\n<p>1 red potato, diced<\/p>\n\n\n\n<p>3 carrots, peeled and diced<\/p>\n\n\n\n<p>1 \u00bd teaspoon ground cumin<\/p>\n\n\n\n<p>4 tablespoons corn or vegetable oil<\/p>\n\n\n\n<p>1 teaspoon sea salt<\/p>\n\n\n\n<p>Prepare the Poblano chiles by toasting each chile over a gas\nflame or under a broiler for a few minutes on high. Check regularly. When the\nskin is blistering, remove and place in a plastic bag. Let cool. Remove the\nskin and seeds. Save the seeds in case you want to add them to the mixture at\nthe end for more spicy heat in the filling. Dice the chiles. <\/p>\n\n\n\n<p>In a large frying pan over medium heat, add the oil. Let it\nget hot. Add the onion and saut\u00e9 for 2 minutes. Add the potato, carrots, ground\ncumin and salt. Stir to mix. Turn the heat to low and cover. Cook until\npotatoes and carrots are tender, about 10-15 minutes. <\/p>\n\n\n\n<p>Add the chiles and mix well.
